I've been singing Hello Saferide's song 25 Days since GM left for Singapore last April 5. The countdown is almost over, GM is coming home on Friday! YAY!
So what have I been up to while GM is away? I've been cooking! You see, I find solace in food, whether it be in its preparation or consumption. But since I am on a self-imposed healthy diet, food preparation easily became my therapy of choice for now.
So for the past days, I have been doing rounds at nearby local groceries, scouting for ingredients and good finds. I have also been on the lookout for interesting recipes that are easy to do and yet full of flavor.
Posted below are end products of my experiments, recipes of which are from different issues of YUMMY as well as from various sites. Enjoy!
I'm personally not a fan of strawberries but I wanted my nephew Aloe to try it so i bought a bag, mixed cream and melted chocolate, and voila! Instant fruit fun-due!
Care to guess what local dish my balsamic rosemary chicken tasted like? Yep, it tasted like our very own adobo!
corn + melted butter + chopped parsley + parmesan cheese = yumyumyum.
No, I did not do this from scratch. Aloe was insistent on buying a brownie mix so that we won't take too much time so I got a pack of Betty Crocker brownie mix and added Andes peppermint chips on top. As expected, it was really yummy! It's Betty Crocker, come on, it has to be good!
The recipe originally asked for gorgonzola but i was too lazy to walk to Santis so i just used blue cheese instead. It honestly smelled like someone barfed all over our unit when I made this but it was totally worth it!
I used canned pink salmon which may not be as tasty as fresh salmon but is surprisingly good. I couldn't find dill anywhere but it still came out well.
This is, by far, the healthiest out of the 13 dishes I made. Roasted chicken plus lettuce, tomatoes and green apple on mini french baguette FTW.
A vegetarian's delight, this pasta is fairly easy to make and very easy to love! It's simply tomatoes, olives and herbs on penne mixed with melted mozzarella cheese.
Tarragon Egg and Pesto Topped BaguettesDon't be fooled -- that's just bottled pesto! I did make the tarragon egg by myself though. No biggie, it's just egg, sea salt, white pepper and tarragon leaves. Yummy breakfast!
Fish Pesto on SpiralsPowdered pesto mixed with cream, topped with Calamansi-marinated tilapia nuggets. The local lime added a refreshing taste to the dish.
The box of couscous has been sitting in my kitchen shelf for around 2 months because I had no idea how to use it. I only bought it out of interest, wondering what I could possibly make with such ingredient. Since then, I have been on constant lookout for an easy couscous recipe, and the search ended when I found a 6-ingredient recipe for this dish. Black olives, tomatoes, canned tuna, lemon, chicken broth and couscous. I enjoyed making this dish the most, not only because it was my first time dealing with couscous but mostly because it was really easy to make. Best part was fluffing the couscous. The little grains are just soooo cute!
My hands reeked of sardines + onions + garlic that for a second, I wanted to saute my hands (seriously!). The capers were a welcome addition, giving this dish an intense flavor. Fairly easy to make and does not cost much, this is definitely something I would make again.
