Lunch is becoming my favorite time of the day these past weeks. My teammates and I have been on a cooking fest of sorts, most of us bringing baon to share with the team. I'm really enjoying this setup, since it gives me a chance to try making new dishes sans the problem of disposing leftovers (I usually cook for myself so I end up with a lot of leftovers).
For my past experiments, I have used chicken and Tilapia/Dory fillets and I think my teammates are getting fed up with them. Since I can't make dishes with mammal-meat, I tried to look for other poultry/fish variants. Tuna came into mind, and I remembered that there's a Tuna Spring Rolls recipe on Yummy's latest ish.
It's fairly easy to make. I just sauteed the onions and garlic, then added the red bell peppers and carrots until they were soft. After which I added the tuna, then soy sauce, salt and pepper to taste.
After a few minutes, I transferred it to another container to allow it to cool. Good thing the evening news are on (I usually cook the night before), I watched it while allowing the tuna filling to cool. I also prepared the spring roll wrapper while watching. When the tuna was cool enough to handle, I began scooping tuna filling into the spring roll wrappers and rolled away!
I think I made around 12 rolls. I deep-fried the rolls for 1-2 minutes just to brown the wrapper since the filling was already cooked. So easy to make, right?
So good too!!! It was definitely love at first bite. In fact, I enjoyed it too much I already consumed three rolls before I remembered to take pictures!
Tuna lovers should definitely try this. If you're tired of eating tuna straight from the can, this should give you an idea of how to enjoy tuna all over again. This could be one of (if not) the best recipes I've tried. I'm so attached to it, I'm calling it Lumpiang Toji (after me of course) =)
